Warm lights, wood textures and beautiful weave patterns give the newly renovated Tides a modern feel with a Filipino flair. The fully updated all-day dining restaurant seats approximately 372 guests, indoor and al fresco, giving more guests to delight in Tides’ international fare.
Tides is centered around fresh foods prepared to order in full view of diners, at a variety of internationally themed stations. Stations include Asian Selection, Noodles, Western, Raw and Fresh, Charcoal Grill and Rotisserie and Dessert.
Tides also added a station that the little ones would definitely love, the Kiddie Station! Kids get to choose any food from a spread of kids’ favorite dishes and even get the food themselves since the chafing dishes are reachable by kids as tiny as 3 feet. And yes, candies as much as they want!
Cebu is known for having the best roasted pig recipe in the country. And when at Shangri-La Mactan, you don’t have to go outside the hotel to get your fill, for Tides is serving roasted pig fresh from their kitchen’s very own charcoal pit every dinner. Complete the experience by dipping the meat with either liver sauce or vinegar and chili. Yum!
The spread at Tides is insanely good! With more than 150 really delectable dishes to choose from, dining at Tides is a feast! Risotto, La Galbi at the Korean station, Chicken Cordon Blu at the Western Station and Lechon at the Charcoal Grill and Rotisserie Station to name a few of my Tides buffet favorites.
And we have to thank Head Chef Mark Mulder and Chef de Cuisine Alvin Lee for the wonderful International spread!
Chef Mark Mulder now heads the culinary team at Shangri-La’s Mactan Resort and Spa, Cebu, taking the lead in the renovation of Tides, the resort’s all- day dining outlet.
“People are excited with the re-opening of Tides. While considered the breakfast hub for our in-house guests, we envision Tides as an all-day dining restaurant, market service- style, where guests enjoy the best of international cuisines,” Chef Mark said.
While Chef Alvin is in charge of all Tides activities related to the kitchen – from menu creation, kitchen staff management and restaurant inventory to plating design. He joined Shangri-La Tides Team at an auspicious time, with a fully renovated all-day dining restaurant as playground to showcase his culinary expertise.
“I am truly thrilled to be joining the Shangri-La group for the first time. I look forward to leading the Tides team, especially after a substantial renovation of the restaurant. As an interactive lifestyle restaurant, Tides’ cuisine philosophy is simple – ‘fresh out of the pan, hot off the grill and right out of the oven.’ We are excited to welcome back Tides’ loyal patrons,” said Chef Alvin.
