Joining Shangri-La’s Mactan Resort and Spa, Cebu’s team of international chefs is Marco Ghezzi, the resort’s new Italian Chef! A native of Milan, CHef Marco is backed by more than 16 years of professional culinary experience. He had loved cooking since he was 6 years old. He has worked for several iconic establishments in Italy including the Restaurant Trigabolo, famous for being one of the restaurants to introduce Nouvelle Italian Cuisine. He had cooked for celebrities like Victoria and David Beckham and Julia Roberts.
Chef Marco prepared a 5 meal course for iLuvcebu.com writers/bloggers Chai Rico and I, Doyzkie Buenaviaje, together with one of Cebu’s best food writer/critique Aissa Dela Cruz. This had been my 3rd time dining at Acqua and I have to say every visit is different from the other, making me fall in love with Acqua over and over again.
For starters, we had thinly sliced then diced salmon fillet drizzled with citrus dressing and shaved fennel salad. The fennel tasting a bit like licorice goes well with the lemony taste of the salmon.
Barley soup was then served. Tomato based soup with barley pearls and smoked ham. I just love the fresh and clean taste of barley.
The next course is not just intriguing but delectably good as well. If I remember it correctly, this was Miss Aissa Dela Cruz’s Favorite in the coursed meal. Squid ink noodles with cream peas. Chef Marco prepared the squid ink and had noodles absorbed it overnight.
The main dish was my personal favorite! Rack of lamb on grilled polenta and ratatouille of vegetables with rosemary. I had my lamb done medium well.
Lastly, the dessert! White chocolate and Cinnamon Parfait with prune compote. Light and not that sweet dessert was just heavenly!
