Kuma Cebu: Japanese Casual Dining Restaurant

Every time a restaurant opens in the metro, I get thrilled with the idea of how Cebu’s getting more diverse when it comes to cuisine choices and flavors. Had a brief, early dinner at a newly opened Japanese restaurant today, and I was pleased to have left the eatery satiated.

Kuma Cebu, which opened  just yesterday ( 14 January 2018) is a  casual dining restaurant serving Japanese food, coffee and dessert. Initially, Kuma Cebu offers only one (1) starter, two (2) mains, a variety of desserts and beverages.

Cebu is blessed with a great selection of Japanese restaurants offering the classic and traditional fare favorites, from sushi to ramen bars. But what Cebu is currently short of is the modern, current Japanese casual dining type. Well, Kuma seems to fill in the particular category. The visit earlier, I got to sample two of the mains – Miso Glazed Salmon, and Chicken Teriyaki Sushi Burrito.

Kuma’s Chicken Teriyaki Burrito, aesthetically is a fusion of the Japanese’ temaki and the Mexican burrito, but the flavor is very Japanese. Seared chicken with homemade teriyaki sauce, fresh citrus coleslaw wonton wraps, avocado and caramelized onions. If you like your maki without the nori, then this one is for you.

Kuma’s Chicken Teriyaki Burrito

Miso Glazed Salmon is salmon fillet capped with Japanese salad,  on top of blanched bokchoy and Kumamoto rice drizzled in home grown miso recipe and unagi sauce. This,  I’ll be craving for for sure in the coming days. One of the best salmon dishes I’ve had.

For dessert, had the Japanese custard, Purin. It’s creamy and smooth with the right kick of sweetness. Would work well, even without the wafer roll and whipped cream.

Walking out of a restaurant with a happy tummy is a high sign that I’ll be going back for sure to try the other offerings at this delightful new Japanese food place. Pretty excited to try their coffee which is made with locally sourced beans.

With its walls spruced up in lucha libre murals, Red Lizard gives out a mood of dining in an authentic, yet hip Mexican taqueria. The restaurant delightfully adds a Mexican selection to Metro Cebu with legit Mexican eats. And I must say,  their offerings are price-wise a steal.

I love how all the food I’ve tried at Red Lizard  are flavored just right – with a good balance of  flavors, not overpowering any ingredients on each dish.

Fully loaded hand rolled flour tortilla Burritos stuffed with Mexican rice, refried beans, three cheeses, sour cream comes in six Dorado Style varieties and are priced from P219 to P299.

Soft Flour Tacos are also available in 5-meat varieties and ranges from P129 to P159 an order, which is a set of two tacos.

And our ultimate favorite pairing is a pitcher of Mojito and a serving of Masa Chips with Creamy Texas Style Queso which serves about 6 people. The entire combo totals to only P427 – such a steal!

Offering a wide wine selection with price starting at P250 a bottle and food ranging from Php100 up, dining or chillin’ out at The Pyramid would not cost you an arm and a leg. Yes, the place might look intimidating with expensive offerings, but it’s quite the opposite. Contrary to what people are expecting, The Pyramid is not a fine dining restaurant but a casually chill, dine and wine bistro. 

3. It’s sorta’ an Art Gallery too
The Pyramid will feature artworks of famous Korean artists  which will give Cebuanos a lead-in SoKor art scene.

4. Four Different Menus in a Day
Breakfast, brunch, all-day and dinner menus offering specialty selection of entrées for different parts of the day. Each menu highlighting a variety of all-time meal favorites and house specials for each time of the day. And they serve coffee and craft beer too!

The Pig and Palm: Food
Jason Atherton together with Manila-born head chef Tim dela Cruz have developed a menu of modern tapas-style sharing dishes, interpreted using the best of Filipino produce. As suggested by the restaurant’s name, dishes will celebrate Cebu’s reputation as a destination for pork, with a focus on pig-based plates sourced from Local farms in Cebu.
The list of appetizers are innovatively pretty exciting. The squid crackers which is mainly made with rice flour and squid ink reminds me of munching on Crispy kangkong, less the oily aftertaste. Kinilaw Shrimp initially gives out a fresh shrimp and papaya crunch, and finishes off with a refreshing coconut milk taste.  The tuna sashimi served with iced Jalapeno gives the Japanese dish a new twist with a light, cool sweet chili kick. Chicken Karaage with Sriracha Mayo seemed to be a perfect pair with just about any of the bar concoctions. And my favorite Carrot in Walnut Pesto – local carrot produce  served with pesto made with fresh basil with a hint of nuttiness. Yum! The Pig and Palm appetizers range from P125.00 to P295.

One of the pig-based plates on The Pig and Palm menu is Rosted Suckling Pig on soya onion gravy, apple and mustard leaf. For a city that loves lechon so much, this tasty rendition is delectably good and a must-try. It starts with a good initial crackle then advances to the pork’s tender, juicy meat – just like how we Cebuanos love it!
I am looking forward to go back real soon and treat myself to a hefty serving of the coal grilled Australian black angus rib eye. Yum!

There’s something about rooftop restaurants that make ’em extra special. The added feature of dining with the blanket of stars as a view is just whimsical. But of course, no matter how lovely the view is or how swanky the restaurant looks, the debate of returning to a restaurant depends really on the taste and quality of food.

Spotted Luca’s Test Kitchen about three (3) weeks ago when it was barely less than a month in operation. Luca’s Test Kitchen’s homey- artsy showroom interior exudes a warm and relaxed ambiance which makes it a good venue to celebrate any special occasion, or even a simple get-together with friends, loved ones and the family. A restaurant with a bar, the al fresco area seems like a really cozy place to hang out with friends after work, also intimate enough to bring a special someone for a dinner date under the twinkly night sky; and the in-door dining area is an ideal venue for a celebration with the family where there’s air-conditioning.

The bill of fare initially consist of the owner’s personal picks and favorites. And with a dash of gastronomic creativity, he makes dishes that are both bold and intriguing. Bringing fearless twists on his favorite eats – making each dish, a plate of his own.
Luca’s Test Kitchen Ribs is tender, fall-off-the-bone with a hint of smokiness and slight sweetness. You can be adventurous with your ribs by drizzling it with the special honey mustard sauce. Sided with half a corn cub in a bed of kernel corn, the rib’s about 500 grams and priced at P410 per serving. Serves about two (2).

Bagnet, a favorite dish from the North of Luzon, gets a spin! The golden deep fried pork adobo slices which gives out a good crunch on the initial bite to a soft inner chunk nip, is served on a bed of sautéed shrimp paste oil, onion, tomatoes and garlic. About 1/3 kilo at  P415, serves about two (2) people a plate.

So far, so good! The interesting take on these familiar dishes is beguiling enough to spark that curiosity to try the other dishes on the menu. But since I am pretty stuffed ( I had a serving of French A L’oignon as my appetizer, and a couple of silvana slices for dessert), on the next visit for sure.

This new restaurant in Banilad is home to great Italian home cooking, and with a backstory that will melt your heart. Trattoria da Gianni which translates to “a small Italian restaurant by Gianni,” is the Guidicelli Family’s way of honoring the memory of their partriarch, Gianni Guidicelli, who always expressed his desire to put up a restaurant.

Sadly, time caught up with food-loving Gianni, and he passed away last year, leaving two of his helpers, Antonia and Jean, with no one to attend to any longer. Since then, the idea of putting up a family restaurant has always hung over the head of Gianni’s son, Gianluca. As a result, Trattoria da Gianni was created. Spearheaded by father and daughter tandem, Gianluca and daughter Giorgia Guidicelli promises to serve only the best Italian home cooking with time-honored recipes right from the Guidiceilli’s kitchen. And now, Antonia and Jean have something to take care of now that their beloved Gianni is gone. It’s the family’s way of thanking the two woman who have served them for more than two decades.

Trattoria da Gianni is casual and unpretentious. The moment you walk in, you’ll already notice the warmness from the servers. Plus, the cozy interiors gives out an even more inviting feel. As per the owners, that’s how guests are received at an Italian’s home – with a warm-hearted welcome.

One thing that sets Trattoria da Gianni apart from opart from other Italian restaurants is that they serve a wide array of bruschettas instead of pizzas. Trattoria da Gianni makes the Italian staple more exciting than usual with the use of premium toppings ranging from parma ham with figs and fresh ricotta, to Taleggio cheese with apricots.

For Italian food lovers, you’d get treated to freshly made pastas with homemade sauces, different kinds of Mozzarella cheeses, a variety of fresh salads, traditional cold cuts and cured meats, premium cheeses, hearty soups, and of course, desserts! The house also serves Gianni’s personal favorites like minsetrone, spaghetti with pesto Genovese, ragu della Nonna and tiramisu.

My top favorites would be the Sautéed shrimp bruschetta, Fresh Pasta with Ragu and the melt-in-your-mouth Tiramisu!

I am very much a fan of Shawarma and Melon Jello drink snack combo since the 2000s. And gladly, Shawarma has become a mainstay on Cebu’s snack menu and with its popularity comes different translations of the beloved wrap, from Greek to Indian to even Filipino. There’s even a  rice version of the quick meal which has become one of my favorite mall grubs, perfectly paired with Nirvana Milk tea.

We are used to having all ingredients already offered on our bowl of pochero soup, but Salinas Restaurant serves the soup and the bone marrow separately. You can either scoop out the marrow and have it on your soup, or try it with the bread and caramelized onion. Either way, it’s sinfully satisfying! haha  That’s just one example of how Salinas makes Filipino dining interesting.

Also, am a big fan of Salinas’ Bloodless Dinuguan. Yes, you read it right – it’s bloodless; and vegetarian too! It’s made of tofu and Lazy Chef’s secret sauce. A must-try as well! This dish is in collaboration with the Lazy Chef and is one of seven dishes on the vegetarian menu.

And seriously in love with their chocolate taho! I love the blend of the delicious lightly flavored pudding with the sago and the muscovado syrup!

With the Ramen Yushoken stafff being trained by none other than the “son of the ramen god” Koji Tashiro in December 2012, it would not come as a surprise that this ramen brand will bring about a long line of noodle soup dish fans to their first branch in Cebu. Just after a month from the restaurant’s soft opening, Ramen Yushoken has already been creating a buzz, with people humming about the outlet as one of the best ramen places in the metro, and also, having the best gyoza in the Queen City!

Officially opened yesterday, 4 December 2015, Ramen Yushoken is finally in full operation,  now serving customers from 11:00AM to 11:00PM daily.

 Ramen Yushoken specializes in “tonkotsu,” or pork-bone broth, boiled for 12 hours for a rich flavorful soup. The “tonkotsu” is poured in a bowl of noodles and then the base sauce is added. Ramen Yushoken has four main  base sauce variations – Shio, Shoyu, Tantanmen and Miso. 

Shio is salt-based soup, where you can enjoy and appreciate the broth in its purest.

Shoyu is soy sauce-based, which gives out a bolder taste than the shio.

Tantanmen has sesame paste with chili oil and ground pork.

Miso is soy bean paste, made by blending seven different kind of miso, giving out a rich texture and a flavorful, complex taste.

Modern-day ramen called “Tsukemen,”  a ramen dish of dry ramen noodles served with a dipping sauce, is also being offered at Ramen Yushoken.

Personally tried the Karai Tokusei which has a complex, fiery flavor. It is made with stock from kelp, fresh bonito flakes and dried mackerel mixed with a spicy tonkotsu broth, served with ground pork simmered in chicken broth, chasu and half an aji tamago. It is made of 24 ingredients, including a miso base and several types of chilies.

After trying all four  base soup variations and other ramen selections, my personal pick would be the Tantanmen for  having a delicate base with added hints of spice and boldness; I would say it’s the perfect bowl that would warm up any gloomy day! Best enjoyed with a serving of gyoza and a can of root beer! Yum!

Also, if ever you’ll get the chance to glance at one of the shelves at the counter, you will spot a blue statue. That my friends is the “Ramen god” Kazuo Yamagishi, where the restaurant’s ramen is derived from; whose main successor is Koji Tashiro, the very person who trained Ramen Yushoken staff in 2012 to ensure that the flavors of the food served at their outlets are at par with the “Ramen god” champion ramen houses in Japan.

Before I end this post, let me drop a few must-do when eating ramen!

First, ramen should be eaten immediately, while it’s hot and the noodles are “al dente.” So better capture a photo as fast as you can and go slurp away!

And yes, slurping away is a must as well, for it helps cool the soup down. It also aerates both the soup and the noodles which helps improve flavor and let the flavors spread through the mouth. It is considered a sign of compliments to the chef as well.

Finally, Go Morita  did it! He has opened his own cafe after 10 months of selling delicious tonkatsu sandwiches and rice balls just outside  of I.T Park.  He used to station at the same spot everyday from 11AM -3PM for a few months selling Japanese snack treats.  Eventually many Cebuanos were delighted by his perseverance and his enjoyable tiny meals-on-the-go that they would get sold out in less than an hour.

The new Go Go Cafe seats about 35 customers indoors and about 4 in the al fresco area. Go Go Cafe’s menu also expanded, now carrying new food items and refreshments like coffee, teas and non-coffee beverages.

Ordered my favorite Go Go Tokyo’s Tonkatsu Sandwich (120Php)  and paired it with iced Cafe Mocha (120Php). The Tonkatsu Sandwich tastes waaay more delicious than his previous version, with the breaded pork cutlet fried perfectly with the outer layer giving out a good crunch and a tender juicy meat on the inside  in  a more a flavorful sauce.

Enjoyed my lunch here yesterday and can’t wait to try the other dishes Go Morita has whipped up for us, the Cebuanos.

Go Go Cafe is on its second week of soft opening. Go Morita’s still ironing the running of his new business venture, training his staff to better serve his guests and perfecting everything to make sure Cebuano’s appreciate what he has kindled in the kitchen.

If you’ve been wondering how authentic Neapolitan Pizza tastes like, good news because Cebu is home to the only Approved Vera Pizza Napoletana or AVPN Certified pizzeria in the country.

 

Each La Nostra Pizza has a crust made from a dough made with highly-refined Italian wheat flour, fresh brewer’s yeast, water and salt – kneaded and formed by hand. The dough is topped with raw, pureed tomato, mozzarella cheese from cow’s milk and fresh and all-natural ingredients. Then baked in Volcanic Brick oven with wood fire.

As the pizza is removed from the oven, an intense smell of baked bread and fresh grassy scent from the basil and oregano envelopes the room. The crust has puffed up with burnt spots on the edges, giving the pizza that slightly smokey flavor. And you would also notice how your hands wouldn’t get all oily when you pick up slices of La Nostra Pizza.

La Nostra Pizza has more sauce than cheese, leaving the middle of the pie a bit wet and soggy and the best way of eating a slice is folding it and take it down one bite at a time. 😉

As the name suggests, Luncheonette is a casual place for a quick, short lunch. The menu subsumes from breakfast-all-day items and comfort food favorites -from corned beef hash, spam and eggs and pancakes to hot sandwiches, like Reuben and Patty Melt, which basically is the love child of a burger and a grilled cheese, making you question how you went this far in life without it.

Yesterday, I went home so stuffed after sampling some items on the Luncheonette’s menu;  the Luncheonette Burger, Patty Melt, Jake’s Hot Chicken and Loaded Fries were my yesterday’s concluding fare, rolling my snacks and dinner in one meal.

The Luncheonette Burger is 5 1/2 ounce patty made with USDA Angus Chuck & Beef Brisket served on toasted ABC sesame bun with lettuse, tomato, onion, pickles and Luncheonette’s special sauce. Ordered bacon and egg add ons to make it even more delicious! So what makes Yakitori Binchotan special? 

Yakitori Binchotan uses a secret sauce for the skewers, and grilled in Binchotan- a special kind of charcoal found only in Japan that brings out the taste of skewered delights. The restaurant has to ship the Japanese charcoal to Cebu, to bring authentic flavors from Hokkaido to Cebu.

We want to ‘transport’ our guests to Sapporo and bring them as close as possible to the true Yakitori experience,” said Francis Villaluz, Sr. Marketing Manager of Gerry’s Group of Restaurants.

Yakitori Binchotan‘s recipes were passed on to Chef Nori by his grandfather who used to prepare them for his family during special occasions.

Yakitori isn’t as simple as putting meat or vegetable on a stick and grilling them. “There is so much discipline required in preparing this dish. The smell, the aroma of skewered dishes, and ultimately the taste makes all the difference,” said Chef Nori.

Recommendations: 

Tiger Roll (335php) is an ultimate favorite at Yakitori Binchotan! Tiger prawns rolled in Japanese Rice and topped with salmon and drizzled with special sauce. Yum!

It’s a bar, a restaurant & a deli shop in one! Ampersand is conformable to whichever mood you want to fill for the day – a chill drink by the bar,  make-your-own sandwich at the deli area or a hefty meal at the restaurant.

 

The Restaurant

The indoor dining area is set at the middle of the space, with the bar on the right and the deli section on the left. Ampersand’s bedecking exudes a mix of classic chic but with a modern appeal; and the warm lights give an overall inviting, homey and intimate allure to its charisma.

The Food

Using mostly fresh produce, Ampersand’s kitchen promises crisp flavors and interesting mix of local and international sapor.

Started our feast with a glass of Hendricks Jive, the house’ special concoction made with Hendricks gin, basil mint and strawberries. The Roasted Kalabasa Soup was next on the bill which came a few minutes after -interesting smokey and creamy base with squash bits; made me want an additional serving the moment my soup spoon hit the base. Gladly, it didn’t took long for the mains to be served. Had the Ampersand’s 32-day dry aged Prime US Angus Rib Eye first, which instantly became my personal favorite – done medium rare, perfectly juicy and tender, and was awesome with the caramelized onions and gravy. The Seafood Risotto also made my personal list of must-go-back-and-eat-this-again list at Ampersand. And the Fresh Strawberry & Mango Pavlova and the Chocolate Ganache Cakes were the perfect feast ender.
