Crimson Resort & Spa Mactan’s new addition to its management team is a very experienced and well travelled man, Joachim Felber; to head the award-winning resort’s culinary department as Executive Chef.
Joachim joins Crimson’s creative and innovative culinary team taking lead for Saffron Café, the resort’s all-day dining restaurant serving buffet and ala carte from breakfast to dinner and in-betweens, Tempo the Pan-Asian restaurant showcasing seasonal ingredients and produce through the many and frequently evolving Chef specialties; Score Sports Bar where the nightly villa cocktail is held and the banquet and events food and beverage requirement.
Joachim, a Swiss national, has been in the culinary field for more than 37 years and has been in more than 25 properties around the world including Europe, Asia and the Middle East. Chef Joachim worked his way up from being an Apprentice Chef in Switzerland to becoming the Executive Chef of world class properties all over the globe. One of his many achievements is having been part of the pre and opening team of Bulj Al Arab and organized two royal weddings for over 3,000 people.
“Chef Joachim is a fantastic addition to the Crimson family, given his impressive resume and impeccable record from the many hotels and resorts he has worked for all over the globe, we are excited with what he can do with his team for the resort” says Crimson’s Resort Manager Kristofer Quadros.
As part of the new development in the resort’s operation with Joachim in the team is the revamp of Saffron Café’s Sunday Brunch. “We’ve seen a good number of locals, especially families coming to the resort on weekends especially Sundays. We want to give them something special to come to at the resort. This is also a great value proposition for those who avail of the day use because they get to enjoy a very large variety of food” Chef Joachim shares.

For main there are Western stations including Middle Eastern selection, charcuterie, Italian, English and French selections. For the Asian stations there are Japanese, Indian and Filipino sections. Live action stations include the grilling station by the Saffron Lanai area and a lechon carving station.
The dessert area was a smorgasbord of sweet treats with various international specialties. Another great addition to the Sunday Brunch is the beverage bar where you can mix your own drink including bubbly based beverages like mimosa.
“We want the parents and the adults to fully enjoy the brunch thus we have a kiddie area in the restaurant with staff to take care of their need for fun and games. There are face painting activities, art crafts and fun games with other children.
