Brique Modern Kitchen Cebu continuous to bring modern comfort food to Cebu, constantly innovating new dishes but with ingredients that are mostly familiar to our tastebuds – triggering nostalgia, at the same time creating a whole new gastronomic experience.

22 August 2015, Brique Modern Kitchen Cebu – The Creative Cuisine Group hosted a food tasting featuring the 6 dishes to be added to Brique’s menu soon. Creating dishes of continental flavors with a glaze of Cebuano zest, renowned personal chef in New York Noel dela Rama introduces his culinary creations of new spectrum of flavors.

Corn, potato and bacon chowder -personal breakfast favorites in a bowl of creamy chowder soup. The starchy potato taste, the sweetness of corn and the salty-crisp bacon go in harmonious relationship with the cream soup. Loved this one!

Penne Regate with chorizo de Cebu, truffle, cream and cheese topped with  arugula; my favorite among the 5 dishes I tasted – loved the earthy truffle flavor and the nutty-bitter taste of the arugula, and how they mildly balance the fatty zing brought by the chorizo.

Miso-gazed medium-well salmon in Pilaf rice topped with pickled radish, cucumber and carrots. This dish is the most Asian among the 6; the miso and sprinkled sesame seeds reminded me so much of Japan.

Crab Cake Sandwich made with meat from Bantayan crabs, with Sriracha mayo, mango & cucumber relish, fresh greens and tomato slices in a sesame bun. A fresh take on a burger!

Cervesa Negra Short Ribs topped a pile of mashed potato and heightened by onion rings with string beans on the side. Yum!

The 6th one is Chicken in green salad with blue cheese and sauce on the side. Wasn’t able to taste this one though. Maybe on my next visit.

Chef Noel Dela Rama continues to push the limits of innovative cooking and these six (6) dishes will surely give a dynamic perspective perspective and diversified feel to Brique Modern Kitchen‘s Menu.
