10 November 2015, Radisson Blu Hotel Cebu – The anniversary party dubbed as Blu Sapphire commenced with the traditional tree lighting at the hotel’s main lobby tailed by a gala dinner at the Radisson Blu Hotel’s Ballroom Hall.
This year, Radisson Blu Hotel Cebu has a white giant tree adorned with blue ornaments and made even more “BLU” with sapphire lights, contributing to a dramatic holiday feel at the hotel’s main lobby.
Celebrating 5 colorful years, Executive Chef Roberto Kunitz and his team crafted a special 5-course menu, each dish made with premium ingredients with global flavors from five (5) regions of the world. Executive Sous Chef Garry De Guia took on a classic French appetizer Canard Bleu Royal made from Blu crab, mango, foie gras praline and crioche. Chinese Chef Aik Liang Tan prepared”Celeste at its Finest,” a light, flavorful soup made from braised lobster in a medley of pumpkin and carrot. The Cerulean Delight made from Tandoor cooked Lapu-lapu fillet with vegetable biryani, poppadom cracker and molecular cucumber-yogurt raita and salmon caviar was a mid-course masterpiece by Indian Chef Hira Tiwari which complemented well with the main course Midnight Revelry – a sous vide U.S. certified Angus beef tenderloin, potato soufflé with organic carrot puree and aged balsamic onion dish by Executive Chef Roberto Kunitz. Chef Allan Barrios concludes the evening with the Blu Sapphire – a bitter sweet chocolate sphere with Dilmah Earl Grey chocolate mousse, strawberry rocks and DIlmah Lychee with Rose and Almond Jelly.
Blu Sapphire’s musical line-up of on-stage acts consisted of performances from Cebu Philharmonic Orchestra, Rachelle Gerodias (Soprano), Byeong-in Park (Baritone), Saxophone music by Joshua Espinosa, Regina Magbintang and Peter San Juan of Philippine Ballet Theater, Mandaue Children’s Choir with Choirmaster Dennis Sugarol and also, a fashion parade featuring creations by Philip Rodriguez, Jun Escario, Philipp Tampus, Joyce Maw and Ixa Escario.
