Tja! In line with Swedish Festival, Midsommer, The Gustavian had brought the celebration to Cebu with authentic and healthy Swedish cuisines. With the help of Swedish Consul of Cebu, Chef Bee Luciano had brewed a perfect menu for all the Cebuanos to give us a foretaste of a real Swedish fare! Enjoy authentic Swedish dishes for the whole month of June at the Gustavian!

Our Swedish feast started off with the traditional Gravad lax  Swedish Caviar. Smoked salmon cured in salt, sugar and dill with Swedish sour cream and caviar sauce. The smokey taste of the tender salmon is smooth and velvety and complemented well with the sour cream and caviar.

For our soup we had Notkott Loksoppa. Notkoff means beef and Loksoppa is onion soup in English.  Rich beef broth  with onion and mozarella cheese. I just love how the cheese melts and slides in your mouth to your throat with the flavorful soup.

For the main course we had a generous serving of the following:  Mapliene Salmon, Swedish Spareribs, Swedish roast chicken, Ham la casja warg (Swedish Ham) w/ Cranberry Sauce served with potato & anchovy caserole. My personal favorites would be the Mapliene salmon and the potato & anchovy casserole! Mapliene salmon’s sweetness rounds out the natural flavor of the salmon giving the fish a silky finish.

Main Course

Dessert dessert!  Choklad Bolla, Swedish ice box cookies, Swedish apple pie, strawberry souffle and Jordgubbskram (Midsummer Swedish Strawberry Compote.) Choklad Bolla, strawberry souffle and jordgubbskram are my favorites. Choklad bolla’s sweet, a bit salty and powdery texture is a very interesting flavor for a dessert but somehow it worked for me. Both the strawberry souffle and jordgubbskram’s are awesome, sweet strawberry syrup with light and soft textures!

These Swedish offerings are available in ala carte. Price range from 325php to 520php per dish.

    Thanks for the lovely review! I added a potato sausage brushed with Pernod recipe that you have to try doyzkie! :-) available in both Gustavian branches for only P295
